Make a gluten free omelet

One of my favorite things to have for lunch is an omelet. It’s so easy to make and depending on the added ingredients, it can be as healthy or as decadent as you please. Personally, I chop up whatever leftover vegetables that I have and add them along with some grated cheese to my egg mixture. Michael was so impressed that I could make omelets, but it really is quite simple. Besides, if it doesn’t come out perfectly, I go to my “Plan B” and make it a veggie scramble :-)!

I will be finishing up my time as a community leader with Udi’s Gluten Free Community on 2/15, but it has been great learning about the gluten free lifestyle. One of the things that I realized is that gluten free doesn’t have to mean tasteless. Omelets are the perfect example…depending on what ingredients you include, they are naturally gluten free.
