The Colemans’ Easy Sausage, Peppers And Onions Recipe

As I continue the quest for my family to eat healthier, I have been “tweaking” some of my personal recipes that “my guys” love. My Sausage, Peppers and Onions dish is one of their weeknight favorites. It’s relatively healthy too (even more so if I switch out my husband’s beloved polska kielbasa for lite, turkey or chicken sausage). It is also quick and simple, which is a must, because I rarely cook meals that take longer than 30 minutes to get ready on weeknights. It really doesn’t need anything (oils, spices, etc.) added, because the peppers, onions and sausages make their own flavorful “juice”. I taped how simple it was to prepare the dish so that you can try it yourself:

Ingredients
1/2 of a medium green pepper, sliced
1/2 of a medium red bell pepper, sliced
1/2 of a medium yellow onion, sliced
1 lb. of your favorite smoked sausage, cut into bite size pieces

Directions
-Add the peppers and onions to a skillet over low heat. Let them soften for about 5 to 7 minutes. Stir occasionally.

-Add the sausages to the pepper and onion mixture and cook for another 5 to 7 minutes. Stir occasionally.

-Cover the sausage, peppers and onions with the top to the skillet. Let the mixture simmer over low heat for about 7 to 10 minutes. Remove from the pan and serve immediately.

That was easy, right? I serve it to the guys with white rice. I’m not eating white rice (for the most part) at the moment and I don’t like the taste of brown rice, so I ate mine with some whole wheat pasta. For the greatest health benefit, you could serve it with brown rice. However, if your family doesn’t like the taste of brown rice (like mine), then there are enriched white rice products out on the market that are more nutritious than standard white rice. Baby steps…

On a side note, did you notice my southern twang in that video? It comes out more when I’m tired. I cooked this meal for dinner last night after a long day!
