Thanksgiving Potluck Ideas:
Easy Meatloaf Recipe Featuring Eggland’s Best Eggs

We have a pre-Thanksgiving potluck dinner practically every year. This year, we will be hosting it on Thursday. I think that I will make my meatloaf this year. I’m busy (who isn’t?); this meatloaf is super easy and (most importantly) it’s a consistent crowd pleaser. (Since I am participating in the Eggland’s Best Pink Dozen campaign), I will definitely be using them this week.

Kim’s Easy Barbecue Meatloaf

-Chop 1/2 an onion and 1/2 a green pepper. Cook in a frying pan until tender. (You can use their own “juice” or a little olive oil).

-Combine the above with:

*1 pound beef seasoned to your taste (I like to include 1/2 an onion soup mix pack with my other seasonings – Lawry’s salt, pepper, onion powder & garlic powder)

*1 slice of the end of a bread loaf crumbled up (or you can use bread crumbs)

*1 Eggland’s Best egg

and

*1/4 cup of bbq sauce

-Mix everything together and place it into an ungreased loaf pan.

-Cook uncovered at 375 degrees for 45 minutes.

-Drain the liquid from the pan. Cover with 1/4 cup of bbq sauce.

-Cook for another 15 minutes at the same temperature.

-Remove from the oven. (You can drain any extra liquid if you like).

(I try to let the meatloaf set for up to ½ an hour before serving, so that it won’t be crumbly.)

You can also substitute turkey for beef if you like.
