“Make Your Own Salad” Double Date

Wish-Bone recently sent me a package of their newest dressing flavors including Bruschetta Italian and Superfruit Berry to preview. We had invited an engaged couple friend of ours over for dinner, so I decided to try out the new flavors on them. The double date was on a Friday night and I was tired after a long week, so I made them work for their supper 🙂

The young lady and I went to a nearby grocery store to shop for the salad ingredients. After getting the produce and chicken, we came back to my home and prepared it in the kitchen while the guys were catching up. I didn’t think that I was very particular in the kitchen, but I realized that I am! The carrots, cucumbers, tomatoes, onions and such had to be cut “just so”. (Over 20 years since making salads at one of my first jobs as a teen, I still slice them the same way!) Fortunately, my friend was a good sport about it and we talked and laughed as we prepared dinner.

While at the store, I had asked if our guests liked the white meat or the dark meat of chicken. The answer was “dark”, so I bought some chicken thighs. My friend didn’t realize that you could just debone the thighs, season them and grill them for a tasty (dark meat) grilled chicken salad. I used the Bruschetta Italian dressing to marinade the chicken. Ideally, you let the chicken marinade for a few hours. In a pinch, you can just do it for a few minutes and place it on a hot grill. Later, pour some more of the dressing on top of the cooked meat. Reggie and Sean popped into the kitchen to teach me how to “spin the salad”…

I put both the Bruschetta Italian and Superfruit Berry dressings out with dinner. The Bruschetta was the group favorite. We are waiting for it to come to our local market, because we like it more than the regular Wish-Bone Italian dressing that is a staple at our home. The Superfruit Berry went home with our guests. (I don’t especially like sweet dressings, but it would probably taste good on a fruit salad.) As you can see by the almost empty serving bowl, our friends were happy with their meal.
