Are you doing anything special for Easter brunch or dinner this year? Like Easter 2020, things are different this year due to the pandemic. Hopefully, we’ll be able to resume our normal Easter celebrations by 2022. Meanwhile, my family will be attending a virtual Easter service and I will be preparing their favorite Easter recipes for brunch.

I’m not 100% in the mood to cook a large meal since we won’t be able to enjoy it with extended family and friends. That is why I gave my husband and sons limits to what I would cook this year. They can pick up to two favorite options in various categories.

I’m not baking this year. Instead, I’m going to buy their favorites (apple pie and lemon meringue pie). I already ordered the lemon meringue pie from Martha’s Country Bakery. They bake a really tasty one. You just need to order it a day or two in advance.

In the past, my husband and sons happily ate ham steak when it was just the four of us. Not anymore. They only want the full glazed oven-cooked ham! It does taste better so I don’t really mind. Since the guys will be getting their ham, the other main dish will be salmon, my current favorite.
